Try out this Chicken Saute it is one of my favorites and doesn't take long to cook at all. This type of a dish works great on school nights when you are all busy but like to have home cooked meals.

Servings: 
4
Ingredients: 
1 1/2 Pound(s) Chicken Breast
2 Cup(s) Cherry Tomatoes
2 Tablespoon(s) Olive Oil
3/4 Cup(s) White Wine
4 Each Scallions sliced (or just a white onion)
2 Cup(s) Parsley
Preparation: 
Season the Chicken Breast with Salt and Pepper
Heat the oil in a large skillet and cook the chicken until brown and cooked through about 3-4 minutes on each side
Transfer the chicken to a plate
Add the cherry tomatoes and the scallions to the skillet and cook until they burst
Add the wine and simmer until the liquid is reduced to half
Add the chicken back to the skillet
Then add the Arugula (or parsley) and mix together
Notes: 

This is one of my favorite dishes. The kids love to eat this and sometimes I serve it over a pene pasta as well.
